Avocados are potassium rich, full of fiber, and heart healthy monounsaturated fats.  I added a twist - peas which increase the protein and fiber.  Try this delicious, nutrient dense recipe as an appetizer or snack!

Ingredients
  1. 1 ripe avocado
  2. 1 zucchini pureed or 1 cup peas (I use frozen and left them out to thaw first)
  3. 2 garlic cloves minced
  4. 1 tbsp lime juice
  5. 1 tomato finely diced
  6. A few dashes of hot sauce
  7. sprinkle of sea salt to taste

  1. *Mash it all together and enjoy 🙂

  1. Corn tortillas
Instructions
  1. Corn tortillas (can also use low carb versions) cut into triangles and lightly spritzed with cooking spray and sprinkled with sea salt and smoked paprika. Bake on a cookie sheet at 375 degrees for about 15 mins. Turn the chips over about 1/2 way through.
