Freekeh Salad

Even though we are meat eaters around here it doesn't mean that we don't enjoy 'meatless Monday's'. Freekeh is high in protein, fiber, and iron as are chickpeas. I hope that you enjoy this concoction, we sure did!

Freekeh Salad
Serves 4

  1. 1 cup freekeh
  2. 2.5 cups bone broth, chicken, or vegetable stock
  3. 1 cup chickpeas rinsed
  4. 2 handfuls of cherry tomatoes halved
  5. 1 red pepper diced
  6. Splash of lemon juice
  7. 2 tbsp olive oil
  8. 2 garlic cloves minced
  9. sea salt to taste
  1. Soak Freekeh in broth in a pot for a few hours until almost absorbed (saves cooking time!) or bring to a boil and then reduce to a simmer until all the liquid is absorbed. Let Freekeh cool a bit, mix everything together in a bowl and top with a little grated fresh parmesan cheese and enjoy!
