Eggy Crepes

You race in the door for dinner and everyone is hungry and there are no groceries and nothing prepared. You could pick up the phone and get take out but you know that's not the healthiest option and it's still going to take 45 minutes. What do do? Break out the eggs and make these super easy and fast Eggy Crepes.

This recipe is so easy to make and really mixes up eggs to deliver a quick, well balanced meal.

Ingredients
  1. 4 eggs
  2. 2 egg whites
  3. Cinnamon
  4. 3/4 cup frozen berries
  5. Real maple syrup, honey, or stevia to sweeten
Instructions
  1. Get your berries out and let them melt a touch. Whisk all the eggs together and pour 1/4 of the mixture in a thin layer in a round sprayed (I use Spectrum organic coconut) skillet. Flip promptly, remove, and repeat until you've used up all of the eggs. Once one round is complete wrap it around some of the berries so that the berries melt from the warmth of the eggs. Sprinkle with cinnamon, and drizzle a touch of real maple syrup, honey, or powdered stevia to sweeten. Enjoy!
Notes
  1. You can also puree a small banana to add into the egg mixture for naturally fruit sweetened crepes or topped with some sliced banana and berries.
