Blender Black Bean Brownies
Quick and easy, and did I say delicious(?) blender black bean brownies

Ingredients
  1. 1 can black beans rinsed and drained (I used Eden Organic)
  2. 1/2 cup quick oats (I used Bob's Redmill)
  3. 1/4 cup coconut oil (melted from solid if need be)
  4. 1/4 cup honey or maple syrup (I used honey)
  5. 10 drops liquid stevia
  6. 2 tbsp cocoa powder
  7. 2 tsp's real vanilla
  8. 1/4 tsp salt
  9. 1/2 tsp baking soda
  10. 3 tbsp's dark chocolate chips
  11. 3 tbsp's chopped walnuts
Instructions
  1. Preheat your oven to 350°F
  2. Blend the quick oats in a nutri-bullet or other high speed blender or food processor and set aside. Puree the black beans with a touch of water, just enough to get a pureed consistency. Add in all of the liquid ingredients (coconut oil, stevia, honey, vanilla) and lightly blend again. Add the oats, cocoa, salt, and baking soda in and blend one last time and then mix the walnuts in. Use a spatula to get the mixture into a lightly sprayed pan (I used spectrum organics coconut oil spray). Sprinkle the dark chocolate chips evenly over the top. Cook for about 16 minutes, remove and let cool for 10 - 20 minutes before cutting and enjoy!
Notes
  1. This recipe made just the right amount for a 8x8" pan and doubled makes a 9x13" pan. When we doubled the recipe we made 2 batches separately in the nutri-bullet and added them all into the 9x13" pan.
