Avocado & Egg Toast – When Life Gives you (lots of!) Avocados…What to Do?!

Ingredients
  1. 2 slices of Ezekiel bread toasted
  2. 1/2 avocado
  3. 2 eggs pan cooked or scrambled *optional
  4. sea salt to taste
  5. splash of lime juice *optional
  6. 2 tomato slices *optional
Instructions
  1. Toast the Ezekiel bread, and either slice or mash the avocado with a fork. Pan cook or scramble your eggs. Top the toast with the eggs and sliced avocado with a sprinkle of sea salt to taste, or top the bread with the avocado and scrambled egg all mixed up together. Sometimes I'll add a slice of tomato and a splash of lime juice. The eggs kick the protein in this recipe up a notch however if you don't eat eggs then you can leave them out.
Notes
  1. The avocado perfectly moistens this toast offsetting the crunch, such a perfect combo!
